Wheatberries are chewey and are wonderful servied over a bed of greens or stuffed into a whole wheat or sprouted wrap.
3 cups cooked wheatberries
juice of one lime
1 T olive oil
3 chopped scallions
2 T fresh parsley, minced
4 T fresh cilantro, minced
1 tsp light soy sauce
Mix all ingredients together and chill before serving.
